Homemade Rainbow Sprinkles

We love sprinkles and our Gookie Dough funfetti cake batter proves that. However, it's time to stop buying shop-bought sprinkles which are loaded with sugar, oils and artificial colouring and have some fun making your own rainbow sprinkles which are super unicorn goodness! Cooking time? NADA!

You will need: 

150g of icing sugar 

One tablespoon of cornstarch 

One and a half tablespoons of water 

One tablespoon of light corn syrup 

1/2 teaspoon of vanilla extract 

Gel food colouring

In a medium-sized bowl, stir together 100g of icing sugar along with the cornstarch, water, corn syrup and vanilla extract until well-combined. Then stir in the remaining icing sugar 

Add the food colouring and stir until well combined and the desired colour is reached. Just a quick note: the more food colouring that is adding, the more artificial it shall taste so aim for pastel. 

Transfer the mixture to a piping bag which is fitted with a relatively small tip. Line two baking trays with parchment paper and using your piping bag, draw long sprinkle-width lines across the paper. You can also make small dots for shape variety.

Allow setting for at least 12 hours so they dry thoroughly. Once dry, peel off dots or shapes and use a knife to cut down the lines to make the sprinkles as big or small as you'd like. And there you go! 

A super mermaid explosion and you can show off your creation with a dash of magic in any dessert or sweet treat you make. Toast? Add those sprinkles. Cupcake? A shimmer of colour. The options are endless! Gookie Dough? Roll it in your homemade sprinkles. We love unicorn poop.
