Gookie Dough Oreo Brownies Recipe

This dessert is where Oreos and brownie batter are layered with our Gookie Dough to create the ultimate dessert bar.

They are three favourite desserts moulded into one. 

Shall we say, it's like a Holy Trinity of desserts?

Well, find out for yourself and you be the judge. 


You will need: 

Cookie dough Layer:

Brownie Layer:

  • 100g Plain Chocolate (around 50% cocoa solids) chocolate chips
  • 85g unsalted butter, cold and cut into cubes
  • 2 ¼ tbsp unsweetened cocoa powder
  • 2 large eggs, room temperature
  • 200g caster sugar
  • 1 ½ tsp pure vanilla extract
  • ½ tsp salt
  • 95g plain flour
  • 16 regular or double stuff Oreos

Directions:

Preheat the oven to 175 degrees Celsius. Spray an 8×8 baking pan with nonstick cooking spray. Line with tin foil or greaseproof paper and spray again. Set aside.


Brownie Layer:

In a double boiler or microwave, melt semi sweet chocolate and butter, stirring often. Once melted, whisk in cocoa and let cool.

Meanwhile, fit your mixer with a whisk attachment. Whisk together eggs, sugar, vanilla and salt (just until combined—about 30 seconds).

Whisk in the warm chocolate mixture. Then, stir in the flour with a rubber spatula. Set aside.


Assembly:

Layer the Gookie Dough on the bottom of the prepared pan, pressing down to form the bottom of the brownies.

Layer as many Oreos that will fit on top of the Gookie Dough. No need to overlap. 

Slowly pour the brownie batter on top of the Oreo layer and make sure it evenly layers on top.

Bake for 35 to 40 minutes, then test with a toothpick. If it comes out clean, the centre is done; if not, let the brownies cook for 5 more minutes. Let the brownies cool before serving!
