Pumpkin Spice Gookies With Cinnamon Cream Cheese Frosting

It's Halloween month which means pumpkin is in and so is every spice and all things nice! We're going to kick off the spooky month with these pumpkin spice Gookies with a gorgeous cinnamon cream cheese frosting.

You will need:

(For the cookies)

A monster tub of Gookie Dough in original flavour

Three teaspoons of cinnamon

Half a teaspoon of nutmeg 

A quarter teaspoon of ginger 

A handful of chopped walnuts or pecans

Half a can of pumpkin paste 

(For the frosting)
110g of butter 

225g of cream cheese 

Three teaspoons of vanilla extract 

500g of icing sugar 

One teaspoon of cinnamon 

Directions

Firstly, take your Gookie Dough and pop it all into a medium mixing bowl. Add the pumpkin and mix well until thoroughly incorporated. Pop in the spices along with the nuts and mix well to allow the flavour to get through all of the dough. Get your baking tray and line it with parchment paper and drop spoonfuls onto the tray. Bake for 170 degrees for around 12-15 minutes or until golden brown. Then allow cooling completely.

For the frosting, beat the cream cheese, butter and vanilla in a mixer until blended, add in the icing sugar 100g at a time and continue to mix until it is all in and mixed well. Finally, add the cinnamon, mix a little more and ice the cookies. Top with shaved chocolate or extra spices!
