Gookie Dough Stuffed Pancakes

Ever wanted dessert for breakfast? These are mini pancakes in a pan which care gorgeously fluffy while the cookie dough centre will melt in your mouth. Sounds dreamy. Now you don't have to worry about the guilt that comes with ice cream for breakfast because these are discreet. Just say the chocolate chips are raisins? 

You will need: 

One monster tub of Gookie Dough in your favourite flavour 

195g of all purpose flour 

One tablespoon of baking powder 

Two tablespoons of light brown sugar 

One egg 

Three tablespoons of unsalted butter 

350ml of milk

Directions (Makes five pancakes) 

In a large mixing bowl, combine pancake ingredients together (apart from the Gookie Dough) and stir until nice and smooth. On parchment paper, roll the Gookie Dough out till around 1/4 inch thick and cut into circles using a cookie cutter that is roughly the shape and size of your pancakes. 

Place a medium skillet over a low-medium heat. Place the cookie cutter onto the skillet and fill with a 1/2 ladle full of batter. Top with a circle of Gookie Dough and pour the other half ladle full of batter over the dough. Let it sizzle away for a couple of minutes and then slide the spatula under the pancake to flip and cook the other side for a further couple of minutes. 

Using an oven mitt, remove the cookie cutter and pop to the side. Move the pancake onto a plate and repeat until all the batter has been used. Top with extra Gookie Dough and enjoy!
