Gookie Dough Meringue Slice

Need a bit of comfort food to sweeten your week up? Feel as if the Monday blues are taking over? It's okay, we feel your pain. To life your spirits up a tad, we're baking these gorgeous Gookie Dough meringue slices and they are divine. Definitely, a way to spice up your lunch break.

You will need:

One monster tub of Gookie Dough in original flavour 

Four medium egg whites 

100g of golden caster sugar 

(Serves 12 small slices: preparation 10 minutes: cooking time 30 minutes)

Firstly, preheat the oven to 180 degrees Celcius (gas mark 4). Take your Gookie Dough out of the fridge and leave it on the side at room temperature for around half an hour to soften, this way it will be easier to work with. Cut two pieces of baking paper and line a shallow baking tray which is greased with butter. Press the Gookie Dough gently into the base of the baking tray and bake for 12-15 minutes or until golden brown. 

Once baked and the cookie base is out of the oven, turn the temperature up to 200 degrees Celsius. Heat the golden caster sugar at 200 degrees until the edges caramelise and then whisk into the stiff egg whites. Spread the meringue on top of the cookie base from the middle to the edges. Lightly press a piece of baking paper over the top of the meringue and then turn the oven back down to 180 degrees and bake for another 10 minutes. Gookie Dough forever saving you from having to make a dough which is extremely time consuming and at least you can nibble on the dough without worries of salmonella! Meringue is served, just don't tell the kids, we'll keep this one a lunchtime secret.
