Gookie Dough Ice Cream

Do you know what Monday nights need? A little bit of ice cream love. We all get Monday blues, but we can make them go away with a cold treat which is milky, creamy, buttery and super delicious. For this is how to make cookie dough ice cream, Gookie Dough style! Forget the post-Christmas diet; this is worthy ever calorie. 

You will need: 

(For the ice cream) 

An ice cream maker 
Three tablespoons unsalted butter
2 cups half and half
2/3 cup dark brown sugar packed
Four egg yolks
pinch of salt
1 1/2 teaspoons pure vanilla extract
1 1/2 cups whole milk
1/3 cup mini chocolate chips
And of course, a monster tub of original Gookie Dough!

Instructions 

Pop your Gookie Dough at room temperature in order for it to be softer and gooier. 

In a saucepan over a medium heat, melt your butter, do so until it is light brown but do not burn. Then add the half and half and simmer. 

Secondly, whisk brown sugar, salt and egg yolks until they become light and fluffy. Pour a cup of the warm half and half into the egg mixture and whisk while pouring. This brings the temperature of the eggs up. Pour the mixture back into the saucepan and heat, stirring occasionally. Make sure the mixture starts to thicken and has reached around 170 degrees. It must coat the back of a spoon. 

Next, take the saucepan back off the heat and add the vanilla extract. Allow the mixture to cool a little and then transfer to a bowl, cover and then pop in the fridge until cold. 

Once the mixture is adequately chilled, whisk the whole milk, pop into an ice cream maker and freeze accordingly (following your maker's directions). While the ice cream is churning, grab your Gookie Dough and roll into small balls. Make as many as you'd like and pop them in, keep mixing! If needed, add extra chocolate chips for a super chocolate taste. 

Either serve straight away or cover and freeze. Voila! 

We've made this our little secret recipe as the ice cream itself tastes like cookie dough too! It's all the good stuff, one taste of this cold treat will send you to food heaven as the buttery brown sugar flavour reminds you of childhood.
