Gookie Dough Ice Cream Sandwiches

Summer, hurry up because we are in need of some lush summer recipies and can't wait to have an excuse for digging into lots of ice cream! Remember choc ices? How your parents would never let you go and get an ice cream from the van because there were choc ices in the freezer? We know the pain, and it hurt! However, we've put a spin on the tedious treat which will make it extra scrummy so you'll never need a Mr Whippy again. Hello, cookie dough ice cream sandwiches.

You will need:

2 pints of ice cream in a flavour of your choice 
260g of dark chocolate which is chopped roughly 
1 tablespoon of coconut oil 

Directions 

Firstly, divide the Gookie in half and lay a large piece of parchment paper flat on the kitchen surface. Shape one portion of the dough into a 6x8-inch rectangle by hand and flatten it by pressing down with your palm. 

Next, lay another piece of parchment paper over the top of the flattened dough. Now, use a rolling pin to flatten the dough out to a 1/4 inch thickness. Transfer to a baking sheet and put the entire layer of Gookie Dough into the freezer for at least 30 minutes to set.

In the meantime, remove your chosen ice cream from the freezer and let soften in the fridge. Now, with the remaining half of the Gookie Dough, repeat the procedure just done and add this to the freezer. Once both sheets of the dough are frozen, remove them from the freezer and take off the parchment paper. Place the first half on a chopping board. 

Spread ice cream over the cookie dough as evenly possible with a metal spatula or spoon. Put the second cookie dough sheet on top of the ice cream layer and press down to even out and place back into the freezer for at least two hours. While the ice cream is setting n the freezer,  chop your dark chocolate and place in a bowl, melt the microwave for 30-second intervals until thoroughly melted. Add the coconut oil to the melted chocolate and stir to combine. 

 Line another baking tray with parchment paper and place the set ice cream and cookie dough on to a chopping board and use a large knife to cut into desired shapes. Quickly dip each ice cream sandwich into melted chocolate making sure it covers it all then pop into the freezer until they are firm and ready to eat!
